Ingredients of Veal schnitzels with Drambuie & green peppercorn sauce

  • 16 small coliban (chat) potatoes
  • 10g butter
  • 1 tablespoon finely chopped fresh continental parsley
  • 1 teaspoon olive oil
  • 4 (about 125g each) veal steaks
  • 1 brown onion, halved, finely chopped
  • 1 garlic clove, crushed
  • 125ml (1/2 cup) Drambuie
  • 250ml (1 cup) Massel beef stock
  • 2 tablespoons drained green peppercorns, coarsely chopped
  • Salt & freshly ground black pepper
  • Mixed salad leaves, to serve

Steps To Make Veal schnitzels with Drambuie & green peppercorn sauce


  • Step 1
    Cook potatoes in a saucepan of salted boiling water for 10 minutes or until tender. Drain. Return to the pan. Add the butter and parsley. Cover and set aside.
  • Step 2
    Meanwhile, heat the oil in a non-stick frying pan over high heat. Cook veal for 2 minutes each side or until brown and just cooked through. Transfer to a plate. Cover with foil and set aside.
  • Step 3
    Add onion and garlic to the pan and cook, stirring, for 2 minutes or until soft. Add Drambuie and bring to the boil. Cook, stirring, for 2 minutes or until reduced by half. Add the stock and peppercorns and cook, stirring, for 3 minutes or until sauce thickens. Remove from heat. Season with salt and pepper.
  • Step 4
    Place the veal, salad leaves and potatoes on serving plates. Drizzle with green-peppercorn sauce and serve.
