  • 80ml (1/3 cup) water
  • 2 teaspoons olive oil
  • 150g shortcut bacon, chopped
  • 1 red onion, chopped
  • 2 celery sticks, chopped
  • 2 garlic cloves, crushed
  • 195g (1 cup) quinoa, rinsed
  • 435ml (1 3/⁄4 cups) water, extra
  • 1/2 cup basil leaves, chopped
  • 70g (2/3 cup) coarsely grated reduced-fat cheddar

Steps To Make Quinoa-stuffed roast capsicums

Method

  • Step 1
    Preheat the oven to 190°C/170°C fan forced. Cut the tops from capsicums and reserve. Remove the seeds and white membrane. Combine passata and water in a baking dish. Season. Place capsicums in the dish. Spray with olive oil. Roast for 20 minutes or until almost tender.
  • Step 2
    Meanwhile, heat the oil in a saucepan over medium heat. Cook the bacon, stirring, for 2 minutes or until golden. Add the onion and celery and stir for 4 minutes or until soft. Stir in the garlic for 1 minute or until aromatic. Stir in the quinoa and extra water and bring to the boil. Reduce heat to low. Simmer, stirring occasionally, for 13 minutes or until the quinoa is just tender. Stir in the basil and season.
  • Step 3
    Divide the quinoa mixture among capsicums. Top with cheddar. Place reserved tops on a lined tray and spray with olive oil. Roast bases and tops for 20 minutes or until tender. Place the tops on the bases.
