- 6 large egg whites
- 1 cup plain yogurt
- 1 cup whole milk
- 1 cup Cheddar cheese
- 2 Tbsp. chopped parsley
Steps To Make Potato and Bell Pepper Baked Frittata
Preheat oven to 375°F. Grease a pie plate with nonstick cooking spray.
Toss potatoes, bell peppers, and onion in oil and place on a baking sheet. Season with 1⁄2 teaspoon salt and 1⁄4 teaspoon black pepper. Roast 10 minutes.
Arrange roasted vegetables in a single layer in the pie plate.
In a medium bowl, whisk eggs, egg whites, yogurt, milk, cheese, parsley, and remaining salt and pepper. Pour egg mixture into the baking dish over vegetables.
Bake until eggs are completely set, approximately 30 minutes.
