Ingredients of Tuna, lemon & lentil pilaf

  • 1 250g pkt frozen chopped spinach, thawed
  • 60g (3 tablespoons) butter
  • 1 brown onion, chopped
  • 150g (3/4 cup) Basmati rice
  • 170g (3/4 cup) dried split red lentils
  • 80ml (1/3 cup) fresh lemon juice
  • 1 500ml carton Massel chicken style liquid stock
  • 60ml (1/4 cup) water
  • Salt & ground black pepper, to taste
  • 1 425g can tuna in spring water, drained

Steps To Make Tuna, lemon & lentil pilaf

Method

  • Step 1
    Place the spinach in a sieve over a bowl to drain. Use the back of a spoon to press out the excess liquid. Set aside.
  • Step 2
    Melt the butter in a medium saucepan over medium heat. Add the onion and cook, stirring occasionally, for 2-3 minutes or until the onion softens slightly.
  • Step 3
    Increase heat to high and add the rice and lentils. Cook, stirring constantly, for 2 minutes or until the rice turns opaque and begins to stick to the pan. Stir in the lemon juice and simmer, uncovered, for 30 seconds or until it evaporates. Stir in the stock, water and 1/2 teaspoon salt, and bring to the boil. Reduce heat to low, cover and cook for 15 minutes (do not stir).
  • Step 4
    Remove the pan from the heat and set aside, covered, for 3 minutes or until all the liquid is absorbed. Add the spinach and tuna, and use a fork to gently combine. Taste and season with salt and pepper. Serve immediately.
