Ingredients of Traditional mac ‘n’ cheese

  • 1 (about 1kg) smoked ham hock
  • 1 carrot, coarsely chopped
  • 1 brown onion, coarsely chopped
  • 2 celery sticks, coarsely chopped
  • 1/2 bunch fresh thyme
  • 400g dried macaroni pasta
  • 50g butter
  • 40g (1/4 cup) plain flour
  • 375ml (1 1/2 cups) milk
  • 1 teaspoon wholegrain mustard
  • 1 teaspoon Dijon mustard
  • 200g vintage cheddar, coarsely grated

Steps To Make Traditional mac ‘n’ cheese

Method

  • Step 1
    Place the ham hock, carrot, onion, celery and thyme in a large saucepan. Cover with cold water, ensuring hock is completely submerged. bring to the boil over high heat. Reduce heat to medium-low. Cook, uncovered, for 2 hours or until the meat is falling off the bone. set aside in the liquid to cool slightly. shred the ham, discarding skin and bone.
  • Step 2
    Strain the liquid through a sieve into a bowl. Reserve 250ml (1 cup) of the liquid. discard solids.
  • Step 3
    Meanwhile, cook the macaroni in a large saucepan of salted boiling water following packet instructions until al dente. drain, then return the pasta to pan.
  • Step 4
    Melt the butter in a saucepan over medium heat until foaming. add the flour and cook, stirring, for 1 minute or until the mixture bubbles. gradually stir in the milk and reserved liquid until smooth. stir over medium-low heat for 2 minutes or until the sauce thickens. Remove from heat and stir in the ham, mustards and half the cheese. season. Pour the sauce over the pasta and stir to combine.
  • Step 5
    Preheat the grill on high. divide the pasta mixture among six 375ml (1 1/2 cup) ovenproof dishes. scatter with the remaining cheese. Cook under the grill for 5 minutes or until the cheese is melted and golden.
