- 2 tablespoons Thai Kitchen® Fish Sauce
- 1 can (13.5 oz.) Thai Kitchen® Coconut Milk
- 3 tablespoons Thai Kitchen® Red Curry Paste
- 4 cups chicken broth, divided
- 2 tablespoons sesame oil
- 1 tablespoon fresh lime juice
- 1 tablespoon agave syrup (or honey)
- 2 tablespoons canola oil
- 1⁄2 pound chicken breasts, sliced
- 1 garlic clove, finely chopped
- 2 teaspoons ginger, finely chopped
- 1 large red bell pepper, sliced
- 1 1⁄2 cups cremini mushrooms, sliced
- 2 cups baby spinach
- 1 tablespoon Thai basil leaves, chopped
- 1 tablespoon cilantro leaves, chopped, divided
- 1⁄2 box (4 oz.) ramen noodles
- 1⁄4 cup peanuts, chopped
Steps To Make Thai Red Curry Ramen
In a bowl, mix together fish sauce, coconut milk, red curry paste, 1 cup chicken broth, sesame oil, lime juice and agave syrup. Set aside.
In saucepan, heat oil. Sauté chicken until seared. Add garlic, ginger, red bell peppers, mushrooms, spinach, basil and cilantro. Continue to cook 5-7 minutes.
In saucepan, add coconut milk mixture and remaining chicken broth. Lower heat and cook 5-7 minutes, or until chicken has an internal temperature of 160°F.
Stir in noodles. Cover and simmer until noodles are cooked. Garnish soup with peanuts.
