  • 14 ripe plums
  • 2 tablespoons caster sugar

  • 1 teaspoon vanilla extract

    Butter a crinkly-edged 24cm diameter metal flan tin, ideally with a loose bottom. Preheat the oven to 160C.

    Meanwhile, cook the plums. Place halved, destoned plums in a roasting tray cut face up.

    Sprinkle 2 tablespoons of caster or vanilla sugar on the plums. Carefully pour the wine into the tray. Pop in the oven and cook until plums have started to soften, but aren’t soft. (about 20 minutes)
  • Step 8
    Set the plums aside to cool and make the mascarpone cream. Whip up the mascarpone with honey and vanilla extract. Place the mascarpone in the fridge to firm up.
  • Step 9
    Place roasted plums into pie base, drizzle with reserved juice and warm in the oven. Serve with the mascarpone cream.
