Ingredients of Rosemary & garlic roasted pork

  • 750g sweet potato, cut into 4cm chunks
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 tablespoon fresh rosemary leaves
  • 3 garlic cloves, crushed
  • 250mls (1 cup) white wine
  • 250mls (1 cup) Massel beef stock
  • Ground black pepper, to taste
  • 350g green beans, topped, diagonally sliced in half

Steps To Make Rosemary & garlic roasted pork

Method

  • Step 1
    Preheat oven to 230°C.
  • Step 2
    Combine the sweet potato, 1 tablespoon of the olive oil and 1/2 teaspoon of the salt. Place in a large roasting pan. Roast in preheated oven for 10 minutes.
  • Step 3
    Meanwhile, heat 2 teaspoons of the remaining olive oil in a large frying pan over medium-high heat. Add the pork and cook for 3 minutes or until browned all over. Combine remaining olive oil and 1 tablespoon of the rosemary leaves with the garlic in a small bowl. Place pork in roasting pan with sweet potato. Brush the rosemary mixture over the pork. Reduce oven temperature to 190°C and roast for a further 15 minutes or until the pork is just cooked through and the sweet potato is almost tender. Remove the pork from the oven, cover loosely with foil and allow to stand in a warm place for 5 minutes before slicing. Leave the sweet potato in oven.
  • Step 4
    While the pork and sweet potato are cooking, reheat the frying pan over medium-high heat. Add the wine and boil for 5 minutes or until reduced by 1/3. Add the stock and boil for a further 10 minutes or until the sauce is reduced by 1/2. Season with salt and pepper and stir through the remaining rosemary.
  • Step 5
    Cook the beans in a small saucepan of salted boiling water for 3 minutes or until tender crisp. Drain. Serve sliced pork with sweet potato and green beans. Sprinkle with black pepper.
