Ingredients of Spiced basmati rice

  • 1 1/4 cups (250g) Basmati rice
  • 2 tablespoons vegetable oil
  • 2 cinnamon sticks, halved
  • 6 cardamom pods, bruised
  • 1 tablespoon fresh curry leaves
  • 1/3 cup (50g) flaked almonds, toasted
  • 1/4 cup (50g) raisins
  • 1 teaspoon salt
  • 1 cup fresh coriander leaves

Steps To Make Spiced basmati rice

Method

  • Step 1
    Put the rice in a sieve and rinse under cold running water until the water runs clear. Shake well.
  • Step 2
    Heat the oil in a saucepan over a medium heat. Add the cinnamon sticks, cardamom pods and curry leaves, and cook for 2-3 minutes until aromatic. Add the rice, nuts and raisins and stir well until all the grains are glossy. Pour in 600ml cold water, add the salt and bring to the boil. Reduce the heat and simmer, covered, for 15 minutes.
  • Step 3
    Remove from the heat and set aside without removing the lid for 10 minutes. Stir through the coriander to serve.
