Ingredients of Mango-raspberry ice cream bombe

  • 1/2 cup (40g) shredded coconut
  • 2L Peters Original Vanilla ice cream, softened
  • 125g raspberries, torn
  • 1 mango, stoned, peeled, finely chopped
  • 1 tbs finely grated lime rind
  • 180g white chocolate, chopped
  • 1 tbs coconut oil
  • Sliced mango, to serve
  • Raspberries, extra, to serve
  • Shaved coconut, toasted, to serve
  • Mint leaves, to serve

Steps To Make Mango-raspberry ice cream bombe


  • Step 1
    Heat a frying pan over medium heat. Cook shredded coconut, stirring, for 3 mins or until light golden. Transfer to a plate and set aside to cool.
  • Step 2
    Place ice cream in a large bowl. Line an 8-cup (2L) pudding basin or bowl with 2 layers of plastic wrap, allowing the sides to overhang.
  • Step 3
    Add raspberries, chopped mango, shredded coconut and lime rind to ice cream in the bowl and stir to combine. Transfer to prepared basin. Cover surface with plastic wrap. Place in the freezer overnight or until firm.
  • Step 4
    Place a serving platter in the freezer to chill. Place the chocolate and oil in a heatproof bowl over a saucepan of simmering water (make sure the bowl doesn’t touch water). Stir until mixture is smooth. Set aside to cool slightly.
  • Step 5
    Turn the bombe onto the platter and remove plastic wrap. Drizzle with chocolate mixture. Top with sliced mango, extra raspberries, shaved coconut and mint. Serve immediately.
