  • 2 cups plain flour, plus extra for dusting
  • 1/2 teaspoon caster sugar
  • 1/2 teaspoon salt
  • 1 egg yolk
  • 3/4 cup water, warm
  • 50g butter, melted

Steps To Make Roti canai with satay dipping sauce


  • Step 1
    Sift flour, sugar and salt into a large bowl. Make a well in centre. Stir in egg yolk and enough warm water to form a soft, sticky dough. Turn out onto a lightly floured surface. Knead for 5 minutes or until smooth and elastic. Place in a lightly oiled bowl. Cover with greased plastic wrap. Set aside to rest for 1 hour.

    Meanwhile, make Satay dipping sauce; Process nuts and onion in a food processor until finely chopped. Heat oil in a small saucepan over high heat. Add garlic, sambal, cumin and turmeric. Cook, stirring, for 1 minute or until fragrant. Add nut mixture. Cook, stirring, for 2 minutes or until lightly toasted. Add coconut milk, sugar, tamarind and 1/3 cup water. Cook, stirring occasionally, for 3 to 4 minutes or until sauce has thickened. Remove from heat. Season with salt and pepper. Cover to keep warm.
  • Step 3
    Divide dough into 8 balls. Using a lightly floured rolling pin, roll out 1 dough portion to form a 20cm round. Cover remaining dough balls with plastic wrap.
  • Step 4
    Brush round with a little melted butter. Roll into a log to enclose butter. Coil dough log into a scroll shape. Flatten scroll shape into a disc. Roll out disc to form a 20cm round. Repeat process with remaining dough balls.
  • Step 5
    Heat a large, heavy-based frying pan over medium-high heat. Brush 1 dough round with a little melted butter. Cook, buttered-side down, for 1 minute or until golden and puffed. Brush top with butter. Turn. Cook for 1 minute or until golden and puffed. Transfer to a plate. Cover with foil to keep warm. Repeat with remaining dough and butter. Serve with satay sauce.
