Ingredients of Plum & ginger layered ice-cream
2L good-quality vanilla ice-cream
125g Ginger Nut Biscuits (Arnott’s brand)
1 x 825g can dark plums in syrup, drained with syrup reserved, halved, stones removed
Steps To Make Plum & ginger layered ice-cream
Step 1Remove the ice-cream from the freezer and set aside for 15 minutes to soften slightly. Line a 7.5cm-deep, 8.5 x 26cm (base measurement) loaf pan with plastic wrap, allowing it to overhang the sides.
Step 2Place the biscuits in a thick, sealable plastic bag. Seal and use a rolling pin to coarsely crush the biscuits. Transfer to a medium bowl.
Step 3Sprinkle the base of the lined pan with half the biscuit crumbs. Top with half the softened ice-cream, spreading it to cover, and then the plums.
Step 4Spread the remaining ice-cream over the plums and sprinkle with the remaining biscuit crumbs. Use the back of a spoon to firmly press the crumbs into the ice-cream. Cover the surface with the excess plastic wrap. Place in the freezer for 6 hours or until firm.
Step 5To serve, turn the layered ice-cream onto a large board. Use a thin bladed knife to cut the ice-cream into 8 slices, dipping the knife in warm water and wiping dry after each slice. Serve with the reserved plum syrup.
