  • 450g broccoli, cut into small florets
  • 400g penne rigate
  • 1 80g jar anchovies in olive oil, drained, oil reserved
  • 1 garlic clove, finely chopped
  • 2 tablespoons chopped fresh continental parsley leaves
  • 20g (1/4 cup) finely shredded Parmesan
  • 1 teaspoon finely grated lemon rind
  • 1 tablespoon fresh lemon juice
  • Ground black pepper, to taste

Method

  • Step 1
    Cook broccoli in a large saucepan of salted boiling water for 1 minute or until bright green. Use a slotted spoon to transfer to a bowl of iced water. Once broccoli is cold, drain and set aside. Return water to the boil, add pasta and cook, following packet directions, until al dente. Drain, return to saucepan and cover to keep warm.
  • Step 2
    Meanwhile, heat reserved anchovy oil in a large frying pan over medium heat. Add anchovies and garlic and cook, stirring, for 1 minute or until aromatic.
