Ingredients of Lamb with pita tomato, cucumber and cos

  • 2 x 275g lamb backstraps, trimmed
  • oil for brushing
  • salt and cracked black pepper
  • 4-6 small pita bread rounds
  • 1 tablespoon red wine vinegar
  • 2 tablespoons extra virgin olive oil
  • 3 vine-ripened tomatoes, cut into wedges
  • 1 telegraph cucumber, sliced thickly
  • 2 baby cos lettuce, trimmed and leaves separated
  • 1/4 cup small basil leaves

Steps To Make Lamb with pita tomato, cucumber and cos


  • Step 1
    Brush the lamb with oil and sprinkle with salt and pepper. Heat a non-stick frying pan over medium heat. Cook the lamb for 5 minutes on each side or until cooked to your liking. Remove, cover with foil and set aside.
  • Step 2
    Toast the pita bread until crisp. Combine the red wine vinegar and olive oil. To serve, slice the lamb and arrange on plates or in bowls with the tomatoes, cucumber, cos and basil. Pour over the dressing and serve with toasted pita bread.
