  • 1/4 (about 600g) watermelon, rind removed, coarsely chopped
  • 2 cups (500ml) chilled cranberry juice
  • 1/4 cup (60ml) lime juice
  • 2 tablespoons caster sugar
  • Lime wedges, to serve

Steps To Make Watermelon-cranberry and pineapple-mint slushies

Method

  • Step 1
    To make the watermelon and cranberry slushy, place the watermelon in the jug of a blender and blend until smooth. Strain through a coarse sieve into a jug. Add the cranberry and lime juices and sugar. Stir to combine.
  • Step 2
    Pour into a shallow metal container. Cover with foil and place in the freezer for 6 hours or until frozen.
  • Step 3
    To make the pineapple-mint slushy, taste pineapple juice and add caster sugar if necessary. Pour into a shallow metal container. Cover with foil and place in the freezer for 6 hours or until frozen.
  • Step 4
    Remove the watermelon and pineapple ices from the freezer. Quickly break up the watermelon ice with a metal spoon. Transfer to a food processor and process until slushy. Transfer to a clean bowl. Repeat with the pineapple ice, adding the mint leaves. (Rinse out the blender after blending the watermelon mixture.)
  • Step 5
    Spoon slushies into serving glasses. Top the watermelon with lime wedges and the pineapple slushies with mint sprigs; serve.
