Ingredients of Warm fruit salad with star anise custard

  • 4 mandarins, peeled, segmented
  • 50g butter
  • 2 tablespoons brown sugar
  • 250g strawberries, washed, hulled
  • 1 tablespoon Malibu

Steps To Make Warm fruit salad with star anise custard

Method

  • Step 1
    To make the custard, stir the milk and star anise in a saucepan over a low heat until hot but not boiling. Whisk the egg yolks and sugar in a heatproof bowl until well combined. Whisk in the hot milk. Return to the pan and stir over a low heat until the mixture thickens and coats the back of a spoon. Remove from the heat.
  • Step 2
    Remove as much of the white membrane from the mandarin segments as possible. Peel the bananas and cut diagonally into thick slices.
  • Step 3
    Melt the butter in a large frying pan over a medium heat. Add the sugar and stir until dissolved. Add the mandarins, bananas and strawberries and cook, turning, for 2 minutes.
  • Step 4
    Increase the heat to high. Add the Malibu and cook, turning for 2 minutes or until thickens slightly. Serve the fruit with the custard.
