Ingredients of Vegetable chips with horseradish dip
Vegetable oil, for deep frying
1 beetroot, unpeeled, scrubbed, thinly sliced (see Notes)
1 large potato, peeled, thinly sliced
1 carrot, peeled, thinly sliced diagonally
1 orange sweet potato, unpeeled, thinly sliced
1 parsnip, peeled, thinly sliced
Steps To Make Vegetable chips with horseradish dip
Step 1Make Horseradish dip; Combine all ingredients in a small bowl. Season with salt. Cover. Refrigerate until required.
Step 2Pour enough oil into a large saucepan to reach 3cm up side of pan. Heat over medium-high heat until temperature reaches 180C (see Notes). Place a wire rack over a baking tray lined with paper towel.
Step 3Pat dry beetroot, potato, carrot, sweet potato and parsnip slices with paper towel. Deep-fry, in batches, for 1 to 2 minutes or until golden and crisp. Using a slotted spoon, transfer chips to wire rack to drain and cool. Season with salt. Serve with dip.
