8 plums, halved, stones removed
1 vanilla bean, halved lengthways
1/2 cup (115g) caster sugar
1/4 cup (60ml) white wine
Steps To Make Vanilla plums with basil mascarpone
Step 1Preheat oven to 200�C. Combine the plums, vanilla bean and sugar in a large bowl. Arrange in single layer in a 6 cup (1.5 litre) baking dish. Pour over the wine. Bake for 25 minutes or until tender and golden.
Step 2To make the basil mascarpone, use a balloon whisk to whisk the mascarpone, sugar and basil until smooth – do not over beat.
Step 3Divide the plums among serving dishes and serve with the basil mascarpone.
