Ingredients of Salmon with citrus & garlic sauce

  • 8 small coliban potatoes, quartered
  • 240g green beans, trimmed, halved lengthways
  • 4 (about 180g each) salmon cutlets
  • 2 teaspoons olive oil
  • Salt & freshly ground pepper
  • 2 garlic cloves, crushed
  • 3cm piece ginger, peeled, finely grated
  • 20g Flora light pro-activ spread
  • 1 teaspoon finely grated lime rind
  • 1 teaspoon finely grated lemon rind
  • 150g pkt baby spinach leaves

Steps To Make Salmon with citrus & garlic sauce

Method

  • Step 1
    Microwave or steam the potatoes and beans until tender.
  • Step 2
    Meanwhile, preheat a chargrill pan on a medium-high heat. Brush both sides of the salmon with 1 teaspoon of the oil. Season well with salt and pepper. Cook for 4 minutes each side or until cooked through.
  • Step 3
    Heat the remaining oil in a large non-stick frying pan over a medium-high heat. Add the garlic and ginger and cook, for 1 minute. Add the spread, lime rind and lemon rind and stir until melted. Season with salt and pepper.
  • Step 4
    Divide the spinach, potatoes and beans among serving plates. Top with the salmon and drizzle with the citrus sauce.
