  • 1 tablespoon olive oil
  • 3 red onions, halved, thinly sliced
  • 250ml (1 cup) dry red wine
  • 1 tablespoon caster sugar
  • 1 tablespoon fresh thyme leaves
  • 250g (1 2/3 cups) plain flour
  • 200g butter, chilled, cubed
  • 125g (1/2 cup) sour cream
  • 1110g pkt goat’s cheese (Couturier brand)
  • Salt & freshly ground black pepper
  • 1 egg, lightly whisked

Steps To Make Red wine, onion & goat’s cheese pies


  • Step 1
    Preheat oven to 200°C. Heat the oil in a large frying pan over medium-high heat. Add onions and cook, stirring occasionally, for 10 minutes or until soft. Add the red wine and bring to the boil. Reduce heat to medium-low and simmer, uncovered, stirring occasionally, for 15 minutes or until the wine evaporates. Remove from heat and stir in the sugar and thyme leaves. Set aside until required.
  • Step 2
    Meanwhile, place the flour and butter in the bowl of a food processor, and process until the mixture resembles fine breadcrumbs. Add the sour cream and process until the mixture begins to come together.
  • Step 3
    Turn the pastry onto a lightly floured surface and knead gently until smooth. Shape into a disc, wrap in plastic wrap and place in the fridge for 30 minutes to rest.
  • Step 4
    Divide pastry into 2 equal portions. Use a lightly floured rolling pin to roll 1 portion out until 3mm thick. Use a 9cm diameter cutter to cut 12 discs from the pastry. Line twelve 80ml (1/3-cup) non-stick muffin pans with the pastry discs.
  • Step 5
    Crumble the goat’s cheese into the onion mixture. Taste and season with salt and pepper, and stir to combine. Spoon onion mixture evenly into pastry cases.
  • Step 6
    Roll out the remaining pastry. Use a 7cm diameter cutter to cut 12 discs from the pastry. Use a 2cm diameter cutter to cut a hole in the centre of each disc. Place the discs over the onion mixture. Brush lightly with the egg and bake in preheated oven for 20 minutes. Remove from the oven and transfer to a wire rack to cool slightly. Serve warm or at room temperature.
