Ingredients of Lamb cutlets with Parmesan crust

  • 2 8-cutlet racks of lamb, trimmed of fat
  • Olive oil, for greasing marinade
  • 60mls (1/4 cup) olive oil
  • 2 tablespoons fresh lemon juice
  • 2 garlic cloves, crushed
  • 2 tablespoons roughly chopped fresh oregano
  • Ground black pepper, to taste
  • lemon Parmesan crust
  • 70g (1 cup) breadcrumbs made from day-old bread (crusts included)
  • 50g (2/3 cup) coarsely grated Parmesan
  • 60g (3 tablespoons) butter, melted
  • 1 lemon, rind finely grated
  • 1 tablespoon roughly chopped fresh oregano
  • 1 teaspoon ground cumin

Steps To Make Lamb cutlets with Parmesan crust


  • Step 1
    To make the marinade, combine the olive oil, lemon juice, garlic, oregano and pepper in a large glass or ceramic dish. Add the lamb racks and turn to coat thoroughly. Cover and place in fridge for at least 3 hours or preferably overnight.
  • Step 2
    Drain the lamb from the marinade and discard marinade. Heat a large, non-stick frying pan over high heat. Add the lamb racks and cook, turning occasionally, for 5 minutes or until the lamb is browned all over.Set aside.
  • Step 3
    To make the lemon Parmesan crust, combine the breadcrumbs, Parmesan, butter, lemon rind, oregano and cumin in a mixing bowl and mix well. Press half the mixture over the back of each lamb rack. Transfer lamb to plate, cover with plastic wrap and place in the fridge for 30 minutes.
  • Step 4
    Meanwhile, preheat oven to 180C. Brush a roasting pan with olive oil to lightly grease. Place lamb, crust-side up, into the roasting pan. Roast in preheated oven for 25-30 minutes for medium until the lamb is cooked to your liking. Remove from oven and stand for 20 minutes before cutting into cutlets. Place the cutlets together to form racks again, wrap in paper towel and then in plastic wrap or foil. Store in the fridge until required.
