Ingredients of Small tomato & olive dampers

  • Melted butter, for greasing
  • 525g (3 1/2 cups) self-raising flour
  • 1 1/2 teaspoons baking powder
  • Pinch salt
  • 50g (2 1/2 tablespoons) butter, at room temperature, cubed
  • 1 300g can tomato soup
  • 125ml (1/2 cup) milk
  • 100g (1/2 cup) pitted, chopped kalamata olives

Steps To Make Small tomato & olive dampers

Method

  • Step 1
    Preheat oven to 220°C. Brush 2 baking trays with the melted butter to lightly grease.
  • Step 2
    Sift the flour, baking powder and salt into a large bowl. Use your fingertips to rub in the butter until mixture resembles fine breadcrumbs.
  • Step 3
    Add the soup, milk and olives to the flour mixture and use a round-bladed knife in a cutting action to mix until the mixture just comes together. Do not overmix. Bring the dough together with your hands (it will be slightly sticky).
  • Step 4
    Turn the dough onto a lightly floured surface and knead gently until just smooth. Divide into 8 portions, shape each portion into a round and place on greased trays. Use your hands to flatten the rounds until 9cm in diameter. Use a small sharp knife to make a cross in the top of each round. Bake in preheated oven for 15-20 minutes or until the dampers are golden and sound hollow when tapped on the base.
