  • 4 x 250g mackerel, cleaned
  • 1/2 cup (125ml) olive oil
  • 1/4 cup (45g) capers, rinsed, blotted dry with paper towels
  • 1 large red capsicum
  • 1 large yellow capsicum
  • 2 Lebanese eggplant, halved lengthways
  • 8 cherry truss tomatoes, halved
  • 1/2 small Spanish onion, thinly sliced
  • 1/4 cup coarsely chopped flat-leaf parsley
  • 2 tablespoons sherry or red wine vinegar
  • 2 tablespoons extra virgin olive oil

Steps To Make Mackerel with escalivada

Method

  • Step 1
    For marinade, combine all ingredients in a bowl and season to taste with salt and pepper. Using a sharp knife, score fish at 1.5cm intervals on both sides. Place in a flat ceramic or glass dish. Rub marinade into both sides of fish then cover and refrigerate for 20 minutes.
  • Step 2
    Meanwhile, heat 100ml olive oil in a saucepan over high heat. Fry capers for 1 minute or until crisp. Remove with a slotted spoon and drain on paper towels.
  • Step 3
    Preheat barbecue grill to medium-high then cook capsicum, turning often, for 15 minutes or until skins blacken. Transfer to a bowl, cover and cool. Meanwhile, brush eggplant with remaining olive oil and barbecue for 3 minutes each side or until tender. Peel and seed capsicum, then cut capsicum and eggplant into 3cm pieces.
  • Step 4
    Preheat barbecue flat-plate to medium-high then cook mackerel, covered with a disposable aluminium tray, for 4 minutes each side or until just cooked through.
  • Step 5
    To serve, combine all vegetables, parsley, vinegar and extra virgin olive oil in a large bowl. Season to taste. Divide escalivada and mackerel among plates. Scatter capers over escalivada. Serve.
