  • 2 tablespoons extra light olive oil
  • 750g chicken tenderloins, thinly sliced on diagonal
  • 8 green onions, trimmed, sliced diagonally
  • 1/4 cup honey
  • 1/4 cup lemon juice
  • 1 tablespoon soy sauce
  • 1 cup roasted cashew nuts
  • Steamed jasmine rice, to serve

Method

  • Step 1
    Heat a wok over high heat until hot. Add 2 teaspoons oil. Swirl to coat. Add one-third of the chicken. Stir-fry for 2 to 3 minutes or until golden. Remove to a plate. Repeat twice with oil and chicken.
  • Step 2
    Add remaining oil and green onions to wok. Stir-fry for 1 to 2 minutes, until bright green. Return chicken to wok.
  • Step 3
    Add honey, lemon juice, soy and cashews to wok. Stir-fry for 1 minute or until heated through. Serve with steamed jasmine rice and garnish with extra green onions, if desired.
