Ingredients of Thai-style vegetable salad
2 medium carrots, peeled
5 green shallots, trimmed, cut into 6cm lengths
1 red capsicum, deseeded, cut into thin strips
35g (1/4 cup) unsalted roasted peanuts, chopped
Steps To Make Thai-style vegetable salad
Step 1Run a vegetable peeler down length of the cucumbers and carrots to form long ribbons. Cut green shallots into thin strips. Combine the cucumbers, carrots, green shallots and capsicum in a bowl.
Step 2To make the dressing, combine garlic, ground chillies, fish sauce, lime juice and caster sugar in a small screw-top jar. Season with salt and pepper and shake well.
Step 3Divide the vegetables among individual serving plates and drizzle dressing over. Sprinkle with peanuts and serve immediately
