Ingredients of Strawberry shortcakes

  • 100g butter, at room temperature
  • 1/2 cup icing sugar mixture, plus extra to dust
  • 3/4 cup plain flour
  • 2 tablespoons cornflour
  • 350g strawberries, hulled
  • 300ml thickened cream
  • 1 teaspoon vanilla extract

Steps To Make Strawberry shortcakes

Method

  • Step 1
    Preheat oven to 160C or 140C fan forced. Line a large baking tray with baking paper.
  • Step 2
    Use an electric mixer to beat butter and 1/3 cup of the icing sugar in a medium bowl for 2-3 mins or until smooth. Sift over the flour and cornflour and stir to combine. Using floured hands, shape dough into a ball in the bowl and chill for 15 mins.
  • Step 3
    Roll out dough between 2 sheets of baking paper until 4mm thick. Place on a tray. Chill for 15 mins. Use a 7cm round cutter to cut 12 discs from dough. Place on the lined tray. Bake for 10 mins or until just golden. Cool on trays for 10 mins. Transfer to a wire rack to cool completely.
  • Step 4
    Meanwhile, reserve 2 strawberries. Blend half the remaining strawberries with 1 tablespoon of the remaining icing sugar in a blender or food processor until smooth. Strain through a sieve and discard seeds. Use an electric mixer to beat cream, vanilla and remaining icing sugar in a bowl until soft peaks form. Reserve 2 tablespoons of the whipped cream.
  • Step 5
    Thinly slice remaining strawberries. Place 1 shortbread biscuit on each plate. Top with half the whipped cream and half the strawberries. Top with another biscuit, then the remaining cream, strawberries and biscuits. Decorate with reserved cream and strawberries. Dust with extra icing sugar. Serve with strawberry sauce
