Ingredients of Russian Easter cake (Kulich)

  • 1/2 cup raisins
  • 1/4 cup rum
  • 1 cup warm milk
  • 2 x 8g pkts dried yeast
  • 1 teaspoon sugar
  • 4 cups plain flour
  • 3/4 cup caster sugar
  • 1/2 teaspoon salt
  • 4 egg yolks
  • 1 teaspoon vanilla essence
  • 150g butter, cubed
  • 1/4 cup slivered almonds (and raisins)

Steps To Make Russian Easter cake (Kulich)


  • Step 1
    Soak 1/2 cup raisins in 1/4 cup rum for 10 minutes. Drain and reserve rum. Combine 1 cup warm milk, 2 x 8g pkts dried yeast and 1 teaspoon sugar. Set aside for 10 minutes.
  • Step 2
    Combine 4 cups plain flour, 3/4 cup caster sugar and 1/2 teaspoon salt. Mix in the yeast mixture, reserved rum, 4 egg yolks and 1 teaspoon vanilla essence. Knead for 10 minutes. Knead in 150g butter, cubed.
  • Step 3
    Place in an oiled bowl, cover and set aside for 1 hour. Preheat oven 170°C. Punch down the dough. Knead in 1/4 cup slivered almonds and raisins. Place in a greased bread pan. Cover and set aside for 30 minutes. Bake for 1 hour.
