  • 1 egg, lightly beaten
  • 3 teaspoons olive oil
  • 1/2 cup low-fat natural yoghurt
  • 2 tablespoons mango chutney
  • 60g salad leaves, to serve

Steps To Make Kumara and chickpea patties


  • Step 1
    Place kumara onto a microwave-safe plate in a single layer. Cover. Microwave for 3 to 5 minutes on HIGH (100%) power or until just tender. Drain. Transfer to a bowl. Add chickpeas. Mash mixture until almost smooth.

    Add couscous, garam masala, garlic, egg, and salt to kumara mixture. Mix until well combined. Using damp hands, form mixture into 8 x 1.5cm-thick patties.
