- 10 large eggs
- 1⁄2 cup whole milk
- 2 Tbsp. olive oil
- 2 medium red potatoes, peeled and sliced
- 2 large Vidalia onions, peeled and sliced
- 1 medium red onion, peeled and sliced
- 1 medium leek, chopped
- 1⁄4 lb. sliced soppressata
- 1 Tbsp. chopped parsley
Steps To Make Cipolla Frittata (Onion Frittata)
Preheat the oven to 350°F.
In a large bowl, beat the eggs. Whisk in the milk.
Heat the oil over medium heat in a large ovenproof frying pan. Add the potatoes and the Vidalia and red onions. Cover and cook for about 20 minutes, turning occasionally until the potatoes and onions are just tender. Add the leeks, cover, and cook for 3 minutes. Remove from heat.
Add soppressata to the pan. Pour in the egg mixture.
Place the pan in the oven and bake for 20 minutes uncovered until the egg is set. Top with the parsley and serve.
